Mini Meatloaf
This is the perfectly portioned meatloaf with the sweet and tangy topping and the extra little crunch on the underside.

Ingredients

  • (1lb) Ground Beef
  • (1 cup) Bell Pepper
  • (1 Cup) Onion
  • (1) Pasture Raised Eggs
  • (1 cup) Breadcrumbs
  • (1 tbsp) Garlic Powder
  • (1 tbsp) Onion Powder
  • (1/2 tbsp) Italian Seasoning
  • (1/2 cup) Ketchup
  • (1/2 cup) Barbecue Sauce
  • (1/4 cup) Brown Sugar

Directions

  1. Soften onions and peppers in 1 tbsp of butter on the stovetop.
  2. Mix softened onions and peppers with ground beef seasonings breadcrumbs and eggs.
  3. Ball the mix-up and place it into a muffin cooking pan. 
  4. Place in a 350-degree oven for 30 minutes.
  5. While the beef is cooking begin to mix the topping.
  6. Mix the 1/2 cup of Ketchup 1/2 cup of Barbecue Sauce and 1/4 cup of Brown Sugar.
  7. After the beef is ready pull the muffin pan out of the oven and spread the topping on each mini loaf and place back in the oven on low broil for 5 minutes.
  8. Pull out of the oven and enjoy!
