Ingredients

  • (1) Pork Tenderloin
  • (2 tbsp) Olive Oil
  • (1 tbsp) Dijon Mustard
  • (2 cloves) Minced Garlic
  • (1 tbsp) Thyme Chopped
  • (1 tbsp) Rosemary Chopped
  • (1 tsp) Salt
  • (1/2 tsp) Black Pepper
  • (1 cup) Apple Cider
  • (1/4 cup) Apple CIder Vinegar
  • (2 tbsp) Honey
  • (1/4 tsp) Cinnamon

Directions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Herb Crust: In a small bowl, mix the olive oil, Dijon mustard, minced garlic, chopped thyme, chopped rosemary, salt, and black pepper to form a paste.
  3. Season the Pork: Pat the pork tenderloin dry with paper towels. Rub the herb mixture all over the pork, ensuring it is evenly coated.
  4. Sear the Pork: Heat a large oven-safe skillet over medium-high heat. Add a bit of olive oil to the skillet. Sear the pork tenderloin for 2-3 minutes on each side until browned.
  5. Roast the Pork: Transfer the skillet to the preheated oven and roast the pork tenderloin for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  6. Prepare the Apple Cider Glaze: While the pork is roasting, combine the apple cider, apple cider vinegar, honey, Dijon mustard, ground cinnamon, and a pinch of salt in a small saucepan. Bring to a boil, then reduce the heat and let it simmer for about 10-15 minutes, or until the glaze has reduced by half and thickened slightly.
  7. Rest and Glaze the Pork: Remove the pork from the oven and let it rest for 5 minutes. Brush the tenderloin with the apple cider glaze before slicing.
  8. Serve: Slice the pork tenderloin and drizzle with additional glaze. Serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
